Can anyone point me in the right direction on how to do this, i have captured a load of old videos using my old Dazzle DVC II card and now I want to convert them to xvid but I dont have a clue on what settings to use, a gui tool would be cool.

You may be able to do this with dvd::rip -- you might want to poke around in the docs and see if there's any info on non-dvd mpeg2. Avidemux also might be able to do this.

Off the top of my head.
GUI : Avidemux, Konverter, Kmenc15
CLI: MPlayer/MEncoder, ffmpeg, transcode.
I posted a link in here to a sticky i have on doom9.org and videohelp.com listing a fair chunk of video apps for Linux.

I'm sure I did log in but it's a possibility
