Looking for Simple Server Setup

I have done some searching, but I have come up empty, so I thought I would ask the community. I would like to setup a simple server for work which would behind a firewall. I have used Freenas in the past, and have looked at Amahi Home Server which looks like it would fit the bill, but they are currently running a really old version of Fedora (unsupported) and they don't have the bugs worked out of the newest version yet running on Fedora 14 (this seems to be an ongoing issue for Amahi since Fedora as a base evolves rapidly).
I'm hoping for some CURRENT (I have found lots of old stuff) docs that would make it easy to set up either an Ubuntu server or Debian server. I would love something that just walks me through simple steps to get the following features:
- file sharing
- automated file back up for networked computers (5 of them) -- secondary backup to the cloud would be super cool (like all documents to Google apps account)
- a few web based apps like a wiki for work documentation
- bashpodder server (to automatically download all of my podcasts and have them available for file sharing)
- VNC to Ubuntu server and to Windows clients
- DREAMING HERE: We have two GUI programs that we use daily at work that have to run on Windows. It would be so cool to be able to access those two programs remotely while on the network and while off the network with either my Linux boxes or Windows boxes. I have no idea how to do this safely and securely though, open to ideas.
Freenas would work great for file sharing, and would offer other cool options like streaming of music and video, but installing other CLI programs and web based apps would fit well.
Has anyone found some easy and good documentation to help with setting up some like I describe above? I don't want to spend hours upon hours figuring out all the packages to install and how to configure each individual thing.
