Two things real quick.
Allen, for your Evolution to Exchange issues. I didn't hear you mention trying this idea. Have you used the IP address rather than the DNS name in your configs? The reason being that when I was setting it up with gmail as the smtp server, I needed to use the IP address rather than smtp.gmail.com:457 or whatever the non-standard port was.
Linc, I think it was, was liked Thunderbird but didn't like the fact there was no integrated calendar. Check out Lightning. It's a Thunderbird plugin to integrate Sunbird.

Regarding Exchange I used Evolution for a while and it worked, would not use the exchange address book or calendar but for basic mail it worked. It was also very slow and took a lot of RAM although this may be because it is primarily a GNOME app and I was running KDE. The best solution I have found though is a web browser pointing to the exchange server, you get almost full functionality without having to run a totally seperate app. Although some exchange servers have this disabled.
